Typical Christmas dishes in Norway

Pinnekjøtt
is a traditional Norwegian main course dinner dish based on lamb ribs. Pinnekjøtt is a festive dish typical to Western and Northern Norway, and is rapidly gaining popularity in other regions as well. This dish is largely associated with the celebration of Christmas and frequently paired with puréed rutabaga, sausages and potatoes, served beer and akevitt. (source: Wikipedia)

Ribbe
Pork ribs, often called ribs, are a traditional dish (from pork) that is common for Christmas in Norway, in Denmark as rib roast. Ribs also played an important role in the pre-Christian winter blot. In Norrøn mythology, pieces from the pig Særimne were eaten every day, and as soon as the side pieces were cut out, new ones emerged. It is estimated that ribs are a Christmas Eve dish for approx. 60% of Norwegian homes, with a focus on Eastern Norway.

Lutefisk - is dried whitefish (normally cod, but ling and burbot are also used). It is made from aged stockfish (air-dried whitefish), or dried and salted cod, pickled in lye. It is gelatinous in texture after being rehydrated for days prior to eating. Lutefisk is prepared as a seafood dish of several Nordic countries. It is traditionally part of the Christmas feast.
